Recent studies have shown that many people do not consume enough dietary fiber to support their health just by following their everyday diet, especially Western diet. Functional food product development could help design products that complement the menu without changing the diet. As an example, TFTAK helped develop fiber enriched dairy products with vitamin D. Besides improvements in gut microbiota, consumer intervention study also showed an increase of blood D vitamin levels after regular consumption of fiber enriched dairy products.
